Serves 8
Ingredients:
1 medium head green cabbage
1 medium head red cabbage
Pinch of salt
3 large carrots 1 red capsicum
1/4 cup shallots
1 tablespoon toasted sesame seeds
Dressing:
2/3 cup rice vinegar
1/8 cup sweetlife xylitol
1 1/2 tablespoons sesame oil
Method:
1. Slice cabbage thinly. Layer the cabbage in a large bowl with the sea salt. Sprinkle salt evenly over cabbage.
2. Peel carrots and cut into thin shreds. Cut capsicum into this strips
3. Drain off any liquid produced by the cabbage
4. Add carrots & capsicum to the cabbage and mix well.
5. Whisk the rice vinegar, xylitol and sesame oil together in a small bowl.
6. Pour the dressing over the cabbage and mix well. Let chill. Garnish with spring onions and toasted sesame seeds before serving |
