1 tbsp extra-virgin olive oil 2 tbsp balsamic vinegar 1 clove garlic, minced 1 cup string beans, steamed so they are still crisp, only slightly tender 2 roma tomatoes, cut into wedges 1 hard boiled egg, cut in 4 wedges 1 200g can albacore tuna, in spring water drained 1 small red onion finely chopped
Instructions:
Mix together the olive oil, vinegar and garlic in a small bowl. Mix the green beans, tomato, onion and tuna together and drizzle with the dressing. Arrange on plates then add the boiled egg wedges delicately on the plate.
