Serving Size: 1 potato with 1/2 cup beans and 15g cheese
INGREDIENTS
4 sweet potatoes (around 100 g each)
2 cups canned Adzuki Beans, drained and rinsed
60g lite grated cheddar cheese
salt to taste
DIRECTIONS
1. Pierce potatoes with a fork and cook in a 220 degree oven for approximately 45 minutes.
2. In a small saucepan, heat adzuki beans.
3. Once fully cooked, slice potato lengthwise, top each potato with 1/2 cup black beans and 15g cheese
