Low Carb Cheesecakes

A super easy recipe to make delicious low carb cheesecakes!

Ingredients:

1. 1 Packet light  Philly Cream Cheese
2. 2 x Eggs
3. 1/3 Cup Sweet Life Xylitol
4. Dash of Vanilla essence
5. What ever flavouring you want eg, lemon juice for lemon, sugar free strawberry jam for strawberry, and so on ( I used 1/2 Tablespoon of strawberry Jam in this recipe)

NB: Sometimes I will also add 1-2Tbsp of light sour cream but it works just as well without it!

Instructions:

~Heat oven to 180-190 degrees~

1. Whip/blend Creamcheese with an electric beater till smooth

2. Add eggs and dash of vanilla, blend again

3. Add Xylitol & sour cream (if you are using it) & blend

4. Add sugar free strawberry jam (or whatever flavour you want) & blend

5. Pour into muffin trays  (I can get 12 mini low crab cheesecakes from this recipe)

6. Bake at 180 degrees for approx 25-30mins

7. Let cool and enjoy!!
